Big, fat, oil-rich sardines caught at the peak of their season, sized well above the usual market grade. Firm, flaky flesh that stays moist even after high heat.

What It Is

Whole sardines (Sardina pilchardus), dressed and graded extra large. The larger size gives a meatier fillet and a richer fat content than standard sardines.

Where It Comes From

Wild-caught from open water during the short seasonal window when the fish carry the most oil. Sardines sit low on the food chain and are short-lived, so they accumulate very little mercury.
