Smoked Over Oak, Cut By Hand
Cold water fish, dry cured overnight and smoked slow over oak and beech. Trimmed to order, packed the morning it leaves the counter.
Oak · Beech · Alder — cured in small batches on the coast
The Smokehouse Counter
Every species we carry, priced by the two kilo box.
Fire, Salt And Slow Smoke
The kiln runs on oak and beech and never above a hand warmth. Fish goes in dry cured, comes out firm at the edge and soft through the middle. Nothing is rushed and nothing is finished in an oven.
From The Counter To Your Table
Excellent 4.8 / 5
From Board To Table
Every order leaves with a card for the fish inside it: how to hold it, how long it keeps, and the one way we would cook it that night. No guesswork, no long ingredient lists.
